As a 14-year-old boy, Guillaume moved to Paris and began his apprenticeship as a chef. In the 1800s, Paris was redesigned around the central food markets of Les Halles that fed its population, and people still talk of ‘the belly of Paris’ with reverence. As Guillaume navigated the city and learned his trade, he discovered the secrets of each arrondissement: where all the great produce was, the greatest bars, the greatest hole in the wall restaurants and bistros, and of course, some of the greatest chefs and restaurants on the planet.
He worked for the great chef Joël Robuchon, who was reputed to be the chef of the century. Following that experience, Guillaume would go on to create his own restaurants around Australia, and become one of the world’s great chefs. In 2022, Guillaume will return to the city that made him. And he is inviting viewers to join him on a ‘moveable feast’ of his own, welcome to Guillaume’s Paris!
